Make no mistake; this is the BEST dessert you will ever taste in your life! The photos do NOT do justice to how good it tastes. It’s probably the best thing you will ever put in your mouth EVER. It’s also just about the easiest dessert to make. I have served this to various people now in my quest to get it right and every single person (even those who aren’t massive dessert lovers) have said it’s the most divine thing they have ever put in their mouth. They have all also agreed that it’s even better than a normal berry fruit Eton Mess. It’s a bit of a cheat recipe actually as it’s so easy and there’s only really one tiny part that involves you cooking something. Basically it’s about having all the dessert sauces and chocolate sprinkles or a nice big bar of Lindt and then adding to it whatever you like. I’ll give you my version but you can make yours with whatever you like. There might be something else you want to add, like marshmallows for example. Also this is the quantity to make ONE dessert so times the ingredients by however many you want to make…..

This recipe would make enough for 4 small individual ones, or one large one. I made three as I used glass pots that are slightly bigger than my normal small rings/pots. It’s REALLY easy to make and tastes lovely! I tested it on my mum and dad. Mum doesn’t like chocolate desserts and dad doesn’t like them too sweet or rich and both of them LOVED it and wolfed down a whole pot. Dad’s verdict was “I love it because it’s really chocolatey but not ridiculously sweet and not too rich!” and mum (who doesn’t even like chocolate desserts) said it was delicious and that it was actually the first chocolate dessert she’d ever really enjoyed. Knowing my parents, they wouldn’t have eaten it at all if they didn’t like it so considering they ate all of them, it must have been good! These really do taste exactly like a cheesecake but are fully vegan! I’m obsessed…….

Coffee chocolate pots!!!!!! For all you coffee and chocolate lovers! These are SO yummy and best of all, they’re actually healthy!! So no guilt in eating them at all! They’ve even got a SUPERFOOD in them! They take about 15 minutes to make and can be stored in the fridge so that when you whip them out after dinner, there’s no fuss – just delicious healthy desserts!! These can be vegan simply by not putting the cream on top (and to be honest they taste just as good without the cream as the vanilla cream in the bottom is DIVINE!). I’ve used my espresso glasses again and the mixture made 3 pots so depending how big or small your glasses are, this will make 2-4 servings!

I had these the other day in a restaurant and I thought “I could do better than this” – so I have….
These can be served as a starter or as a side dish to any meal. They can be served on their own, on a bed of lettuce, on some toasted brioche or on anything you fancy really. They’re quick to make and taste heavenly! And with only a few tablespoons of cream, they’re really not bad for you either! I used one punnet of mushrooms and as a starter or even side dish it probably would have served 4. If you need to make more, just add more of everything!

Ok this one if for all my UK subscribers (sorry if you’re abroad!). If you scroll down through my recipes you will see my smashed avocado on toast which is so full of goodness it’s practically medicinal!! Well, I have found a cheat version and I want to share it with you now. This is for when you are pushed for time and you really don’t have the energy or inclination to make anything from scratch (which has basically been me now for about a month!). I LOVE satay sauce. I can’t get enough of it. Sadly in most Chinese restaurants, you only get it with chicken which is no good for me. So I set about making my own which I can put with Quorn, Tofu, Paneer Cheese or just veggies. You can use this recipe for chicken too but I’m going to show you how to make the best Quorn satay ever!! I have used 4 Quorn fillets and gotten 3 skewers out of it. I chopped each Quorn fillet into 3 large chunks and then used 4 pieces on each skewer so if you work to the basis that you want 2 skewers per person then you need roughly 2 ½ fillets per person. The sauce makes enough for 3-4 people so halve the ingredients if you’re only making for one or two (or save the rest and heat up again the next day!)

Serves as many as you like

Butternut Squash and Sweet Potato are really good for you and I love them because they are so versatile. I don’t fry much these days and both these veggies bake beautifully in the oven so it’s a win-win. These wedges have a spicy southern fried taste to them, yet they’ve been baked. They’re a healthy alternative to other styles of potatoes. I have been lazy and used a bag of ready chopped but there are some things in life that I think are worth buying ready chopped for convenience and these are one of them. It not only saves time but also probably saves on waste for me too as cooking for one often results in there being waste (especially when using large veg). I find that I can eat a whole one of these bags for my dinner with some broccoli and mushrooms (although with a large meal, one bag would definitely serve two people)
